It is a heavenly yet healthy mixture of the sweetness of coconut and melted jaggery which is hidden and sealed within a layer of steamed rice flour dough. It is served as evening snack or as part of breakfast. Ela Ada can be made in wheat and rice flour and the fillings can vary as you prefer. It is one of the healthiest delicacies out there since it is steamed and grilled in pans. INGREDIENTS

For melting jaggery 1.Little Water 2.Jaggery - 4 piece For filling 1.Grated Coconut - 1 cup 3.Melted Jaggery For boiling water 1.Water-3 cup 2.Salt -pinch For dough 1.Rice flour - 1 and 1/2 cup 2.Boiled water -3 cup
3.Green jackfruit flour-1/3 cup
4.Banana leaf to wrap


METHOD

  • To begin making ela ada recipe ,first keep a pan on the gas stove and bring water to boil.
  • Add pinch of salt into the water .
  • Add 1 and 1/2 cup rice flour into the boiling water.
  • Also add 1/3 cup green jackfruit flour into it.
  • Mix gradually and keep stirring until the water completely disappear.
  • Move this into a flatten plate .
  • Wait to cool down otherwise hands will burn
  • Knead it with your hands to make a soft dough and keep aside.
  • Next combine 1 and 1/ cup grated coconut with melted jaggery syrup.
  • Take a piece of banana leaf and place the dough in the centre .
  • Flatten the dough with wet fingers to get a nice and even flattened dough.
  • Place the ela ad in a steamer and cook for 10 minute.
  • Once done serve it .

Ingredients

  1. Mango-4 no
  2. Sugar-1/2 cup
  3. Almond- for garnishing
  4. Milk-1 &1/2 litre
  5. Vermicelli-1/2 cup
  6. Chopped mango-for garnishing
Method

  • Slice mango.Add it  into a blender and make a puree.
  • Boil milk in  apan.
  • Add 1/2 cup roasted vermicelli and mix well.
  • Add sugar and mix well.
  • Slow cook this and stir continuesly.
  • When it start to thick add some ghee .
  • Allow to cool completely
  • After cooling add the prepared mango puree into this and mix well.
  • Serve into  a glass and garnish with chopped mango and almond .

Method


  • Boil  1/2 glass Milk .Then add 1/2tsp coffe powder and 1tsp sugar.Keep aside 
  • Soak some kas kas in cold water and keep aside .
  • Take a glass and garnish with chocolate syrup.
  • Pour the coffe mixture into the bottom like in this picture.

  • Next add some chopped apples and bananas .
  • Add some kas kas as next layer.
  • Again add scoop of vanilla ice cream and add more kas kas .
  • Top of the glass garnish with some pomegranate fruit .
  • You can add roasted cashews and corn flakes on the top if you want.

  1. Pappad
  2. Grated coconut-2tbsp
  3. Small onions(shallots)-10
  4. Curry leaves
  5. Mustard-1tsp
  6. Red Chilli Flakes
  7. Turmeric Powder-1tsp
  8. Salt-a pinch
  9. Coconut Oil-for frying
Method

  • Slice pappadams into small size and fry them in hot oil .Then keep aside.
  • Heat a pan and add some coconut oil
  • Add mustard and allow to crackle them.
  • After crackling mustard add some curry leaves .
  • Add chopped small onions and then grated coconut . stir well until it turns golden colour .
  • Next add the spices turmeric powder and salt and stir well.
  • Finally add the fried papadams into this and mix well.
  • Serve with more curry leaves.
