Ingredients

  1. Basmati Rice-2cup(1litre)
  2. Chicken-1 1/2kg
  3. Ginger paste-1tsp
  4. Coriander leaves
  5. Mint leaves
  6. Garlic paste-1tsp
  7. Green chillies-7no
  8. Tomato-5no
  9. Onion-5 no
  10. Coruander powder
  11. Chilly powder-1tsp
  12. Turmeric powder-1tsp
  13. Fenugreek-1tsp
  14. Pepper powde-2tsp
  15. Cloves
  16. Cardamom
  17. Garam masala-1tsp
  18. Cinnamon
  19. lemon juice-2 no
  20. Curd-5tsp
  21. Dalda/Ghee
  22. Saffron
  23. Cashewnut
  24. Raisins
  25. Salt
  26. Pineapple essence

Method

  • Hot a cooker.
  • Add  some ghee.
  • Roast cashews and raisins.
  • Add the spices cinnamon,cloves,fenugreek and cardamom.
  • Add 5 sliced onion and stir well until its turn to golden brown in colour.
  • Add 2tsp ginger garlic paste and stri well.
  • Add five sliced tomatos into this and stir well.
  • Add 2tsp coriander powder,1tsp chilly powder,1tsp turmeric powder ,1tsp pepper powder and 1tsp garam masala.
  • Mix everything well.
  • Add 2 lemon juice and 5tsp curd.
  • Add some curry leaves and mint leaves.
  • Next add the cleaned washed 1 1/2 kg chicken pieces into this masala and mix well.
  • Close the cooker and cook about 7 minutes.
  • After 7 minutes open the cooker and add 1 cup water .
  • Add the washed rice and mix well.
  • Add 2 drops of pineapple essence and  add oinch of saffron.
  • Add more coriander leaves .
  • Close the cooker and pressure cook for 1 whislte .
  • After whistle open the cooker and mix the rize and chicken very well and serve into a bowl and have fun.

Method

  • Marinate chicken with salt,pepper powder,tomato sauce,soya sauce,mustard paste ,ginger paste ,garlic paste and keep this about 1 hour .
  • Hot a pan and pour some vegetable  oil.Add little ghee into this.It makes the masala little smooth .If you are not like ghee you can avoid (its not necessary). Add some onions and saute them till its just little roasted.Add some salt and pepper powder  into this .It makes the onions roasted  easier .
  • Add the marinated chicken into this .Close the pan and cook about 15 minutes till the water drains and chicken get cooked well.
  • Add the chopped capsiccum and garam masala .Then mix well. 
  • Add the soaked cooked rice (cook rice with carrot ,cloves,cardamom,cinnamon) into the top of the chicken masala .
  • Add some roasted cashews , raisins, coriander leaves on the top.
  • Close the vessel and start sum process.Put weight on the top and add some fire charcoal on the top .Then cook about 30 minutes in low flame .
  • Mix the rice and chicken masala . Serve the rice  with chicken and garnsih with coriander leaves and nuts .

For marinate chicken 
  1. Chilly powder-2tsp
  2. Salt-1tsp
  3. Yogurt-3tsp

Method

  • Clean  and wash chicken .
  • Marinate chicekn with yogurt,chilly powder and salt.Keep aside this  minimum 1 hour.
  • Slice onions and make a smooth paste .or stir fry onions and make a smooth paste and keep aside .
  • Slice coriander leaves and green chillies .Grind them into a smooh paste and keep aside.
  • Hot a pan .Add some oil .
  • Add onion paste ,cloves,cinnamon,cardamom  ,coriander-chilly paste  and stir well until the raw smell completely gone .Add little water to this and stir continuesly.
  • Next add the marinated chicken pieces into this and add  garam masala ,some salt and red chilly powder.Cook this about 15 minutes pan closed .(if chicken not done till this time. cook more minutes)
  • After 15 minutes add the yogurt ,chopped carrots, green chillies and coriander leaves.Cook this 5 more minutes.
  • Serve the hot chicken mughlai into a serving plate and garnish with more carrots,coriander leaves and chopped green chillies.

Ingredients

  1. Chicken-200g
  2. Rice flour-1/2 cup
  3. Salt to taste
  4. Water-1 cup
  5. Coconut milk-1 cup
  6. Pepper powder-3tsp
Method
  • Pressure chicken for 1 whistle with salt and water .
  • First steps is the preparation of rice balls .for this hot some water and add pinch of salt then  add the fine roasted rice flour little by little and mix it eventually with  a spoon .
  • Remove from flame and keep it aside .
  • When the dough is still warm knead it well with hands till its soft and smooth( if its too hot dip your hands in cold water  while kneading).
  • Make small balls like in the picture from the kneading dough and keep aside.
  • Clean and wash some prawns and marinate with salt and red chilly powder.Next fry them in hot oil and keep aside.
  • Hot some water in a pan and add the small rice balls  we prepared .then add some salt ,pepper powder and mix slowly .
  • Add the fried chicken pieces  into this and mix well.
  • When  the water becomes little dry  add the coconut milk  slowly into this mix the whole ingredients.

Method

  • Pressure cook chicken  for 1 whistle.
  • Hot a pan .Pour some oil.Add sliced onions and saute them .Add some salt it will make saute the onions more faster .
  • Next add chopped green chillies ,turmeric powder ,pepper powder , garlic paste,ginger paste , curry leaves and coriander leaves .
  • Next add the chicken pieces into this and saute well.Allow to cool in a bowl and keep aside.
  • Take a bowl and add some maida and hot water and make a gum paste .
  • Take one  samosa stripe and fold them like cone shape and fill the strips with the chicken masala mix .
  • Finally close the edges with maida gum paste.
  • Hot some oil in a pan and deep fry the samosa until it turn golden broen in colour .
  • Serve this into a bowl and have with tomato ketchup or chammanthi.Have fun :)

                              This is a simple chicken shawarma recipe that can be prepared everyone at home . Only simple procedure is required.Cooking the chicken and vegetables is the only required procedure.Final  assemble the chicken filling and kuboos. Mayyonaise is the tasty ingredient of this shawarma .

Ingredients

  1. Chicken-1 kg
  2. Finely chopped carrot-2
  3. Finely chopped onion-5
  4. Mayyonaise-250g
  5. Finely chopped Green chilli-8
  6. Salt to taste 
  7. Cabbage-1/2
  8. Finely chopped tomato-3

Method

  • Mix all the finely chopped    vegetables (carrot, tomato, onion, green chilli) in a bowl. Keep aside  1 bowl of vegetables.
  • Hot a pan and pour some oil.Add the mixed vegetables into it and saute well.Take out into a bowl and keep aside .
  • Hot another pan and add some oil.Add the cleaned chopped chicken and cook about 15 minutes.
  • Crush the chicken and add the cooked and Non cooked vegetables mix well.
  • Add mayyonaise ,salt into this vegetables and  mix well.
  • Take   one kuboos  and  put some fillings on it .Roll the kuboos. OR fill the chicken mixture in between two kuboos and serve .

  2. Soya suace-1tbsp
  3. Salt-2tsp

  5. Egg-1

  8. Lemon juice-1/4 cup
  9. Sugar-2tbsp
  10. Lemon -1(roundly sliced )
  11. Honey-1tbsp
  12. Corn flour-

  15. Lemon zest -1/2 lemon 
  16. Coriander leaves  or sesame seeds -For garnishing 

Method

  • Take the cubically sliced chicken breast in a bowl and add   soya sauce,salt ,pepper ,egg , then mix well witha spoon .Next add corn flour  gently and coat well with the chickens and keep for about 5 minutes .
  • Hot some oil in a pan and fry the chickens til its turn golden in colour and keep aside .
  • Hot another pan and spread 1tbsp of oil .Next add chicken stock,lemon juice,sugar, and mix well.Next put the sliced lemon into this and add honey and add more sugar if required.
  • Finally add 1 tsp of corn flour water into this and mix well.Add lemon zest at the end and cook aboit 5 minutes .
  • Remove the lemon slices and switchoff the stove .
  • Serve the chicken fries in a plate and add  the desired amount of  lemon sauce we prepared .
  • Finally sprinkle some sesame seeds or coriander leaves on the top .

                        • Slice chicken breast in cubic manner and put in a bowl  and add salt ,garlic paste,water ,peppr powder and mix  gently.Refrigerate this for about 10 minutes .
                        • Crack one  egg in a bowl and add garlic paste,10tbsp cold water ,baking powder,corn flour ,maida,and whisk well.finally add some oil and whisk very well.
                        • Add  the  chicken marinated with the previous dough and mix well.
                        • Hot some oil in a pan and fry the marinated chickens  in low flame .Cook them til its turn its colour in golden brown.Remove the fried chicken from oil and drain them .
                        • Hot an another pan and add the prepared tomato mixture and heat the sauce .it began to bubble  then turnoff the heat .
                        • Add the fried chickens into this and toss it until its coated with chickens.
                        • Serve the honey chicken into a plate and garnish with spring onion or sesame seeds

                        3. Pepper powder-1 tsp

                        • Take  chicken flush and slice them to square cubes.

                                              • Next adding the cashew paste and badam paste.both pastes  are made by blending them with  some water .
                                              • Adding the garlic paste,ginger paste,sliced green chillies ,cardamom ,salt,pepper powder into this pan and mix well using a tawa .
                                              • Next  add the yogurt.it reduce the thickness taste of the spices .just check your taste and add more salt and pepper powder if required.
                                              • Finally add 1 cup of water and stir well.Then add the cleaned washed chicken pieces into this and again just mix everything and add the urryleaves,mint leaves ,coriander leaves.
                                              •  Close the pan and cook  about 15 minutes in low flame .

                                              • Cut and clean the chicken very well .
                                              • Take a bowl and add  rice powder,chilly powder,turmeric powder,coriander powder ,salt and add some lemon juice then mix  the masala well .Next add the chicken and marinate the masala  on the chicken very well.
                                              • Heat oil in a pan and fry the marinated chickens in low flame and keep aside .
                                              • Take some of the oil from the chicken fry pan and keep some for other purpose.
                                              • Again hot the excess oil in the same pan and first add fenugreek .then add cumin seed ,fennel seed ,finely  chopped garlic  ,finely chopped ginger   then saute them and add sliced onions and again saute   in a low flame .add some red chilly flakes grinded  ,garam masala and mix well.
                                              • Next add sliced tomato and add coriander leaves,curry leaves,garlic paste, ginger paste  and add some salt to taste .Again saute them well and add little amount of tomato sauce .
                                              • Hot a pan and pour some oil .then roast the coconut strips well and add some coriander leaves, curry leaves  and red chilly flakes .Then por the mixture into our kondattam and mix the whole things .
                                              • Close the pan and put some fire charcoal above and cook for more 5 minutes .

                                              • Serve this into a plate and garnish with some more curry leaves and coriandel leaves .

                                              • Hot a pan and fry this chicken in low flame.Dont fry too much .Just fry them half. 
                                              • Add chopped onions and when it changes brown in colour add chopped Capsicum, Pepper powder  , Tomato sauce , Chilly sauce, Soya sauce ,Green chillies and add  required  amount of salt after checking  it. Cook them for 10 minutes  in low flame .Add the fried chicken into this and mix well and again cook for 5 minutes.
                                              • Garnish with Curry leaves and serve into bowl.


                                              This is a kerala malabari style chicken  dum biriyani.Its tasty ,spicy and yummy biriyani recipe.The difference is that its a fried chicken dum biriyani .Dum biriyani means a process of chicken and rice are cooking in fire charcoals in a pot .The upper and lower parts  of the pot with the fire charcoals and cooking  without flame  for the final few minutes .

                                              Chicken fry


                                              • Wash and rinse the chicken .
                                              • Add chilly powder ,turmeric powder,Ginger garlic paste,lemon juice  and required  salt  into the chicken and  mix the ingredients well.
                                              • Fry them in  hot oil in low flame .

                                              Chicken biriyani

                                              • Heat a biriyani pot and add 500g of ghee into this.
                                              • Then when the ghee melt Add 1.5kg of onions into it .stir well til the onion turns a golden in colour.
                                              • Add 500g of tomato into this and again stir well.
                                              • Sprinkle required amount of salt into it and mix the ingredients well.
                                              • Add  1/2 cup of garlic paste and ginger paste and  mix well.
                                              • Add 1/2 cup of green chillies into this and stir well.
                                              • Next step is adding the powders.First add 1 spoon of turmeric powder ,2 spoon of garam masala, 2 spoon of coriander powder , 1 spoon of  chilli powder, 1 spoon of black pepper powder and gently add 1cup of curd into this and mix well.
                                              • Add  the mint ,coriander leaves  and add chopped curry leaves .Then add more  salt into this again after checking your salt level.Then mix the all ingredients together .
                                              • Add 3kg of fried chickens into the prepared masala  and mix the all ingredients together.
                                              • Wash and rinse the rice with water .
                                              • Boil 3 litre of water in a pot and add 3 spoon of turmeric powder(only if required more yellow colour).Add 3 cup of chopped carrots and rice into this boiled water.When the rice done drain the exces water contained in the rice .
                                              • Add lemon juice into the masala and add the rice into the  chicken masala .Garnish with mint and coriander leaves. Add some cinnamon over it and cover the pot for 15 minutes and add some fire above the cover of the pot this process is called 'dum process'.make sure that there is no flame  under the  pot.
                                              • After opening the cover ,mix the rice and chicken masala together and serve the hot tasty yummy malabar fried chicken dum biriyani.Garnish with cashew nuts,raisins and fried onions.

                                              This is a simple naan recipe .Everyone can make this at home very fast.This naan is prepared on tawa .Its required only  7 ingredients.The time required to make this is less.but allowing the dough to smooth and soft is taking minimum 2 hours .
                                                                     This naan making without yeast.if required we can add it .For further we can add egg or any kind vegetables for making it attractive.This naan is served with butter chicken .The combination become really perfect.below the recipe just try .

                                              Ingredients

                                              1. All purpose flour-2 cup
                                              2. Oil-1 tbsp
                                              3. Baking soda-1/2 tbsp
                                              4. Sugar -1tbsp
                                              5. Salt-1/2 tbsp
                                              6. Curd-1/4 cup
                                              7. Butter
                                              8. Water

                                              Steps of making

                                              • Take a bowl and add 2 cup of maida and add baking soda,salt,sugar,curd and oil then mix well.add some warm water to knea the dough .add little by little water and knead the dough well.
                                              • Put little oil on the top of the dough and keep this for 2-3 hours in a warm place .
                                              • Pour some maida on hands and make small balls using this dough .
                                              • Take the small balls and put this in maida .then make naan using a roller.Now its ready to place on tawa.
                                              • Hot a tawa and place  the naan on tawa and partially cook this.flip both sides .
                                              • Take this naan out of thawa when its become browned in colour and charred.Apply some butter over and serve with your favourite curries .here it served with butter chicken .

                                              Butter chicken or chicken makhani is an indian dish .This is a famous well known indian dish all over the world .Typically its like kuruma type.Now its served not only in india .many other countries adopted this dish .It can prepare hot or mild depending the taste.
                                                                        The preparation is very simple .First step is to making the tandoori chickens.marinating the chicken in yogurt and spices for several hours and fry them in oil or tandoor  .then making the  gravy with the tomatos and cream .then putting the chciekns in this gravy outputs a spicy tasty yummy bautter chicken .This is my favourite recipe ever.Check it out the steps below and make a try

                                              1. Chicken-1kg
                                              2. Yogurt-2tbsp
                                              3. Salt-2tsp
                                              4. Curry masala-2tsp
                                              5. Cinnamon powdered-2tsp

                                              1. Butter-4tsp
                                              2. Cloves-
                                              3. Green cardamom-
                                              4. Tomato-
                                              5. Ginger-

                                              9. Water(optional)-
                                              10. Fresh cream-

                                              12. Kashmiri chilly powder-

                                              steps of making

                                              Frying

                                              • Wash and clean chicken and cut chicken into small pieces.
                                              • Then add 2 tbsp of yogurt ,2 tsp of salt ,2 tsp of curry masala,2 tbsp of chilly powder ,and 2tsp of cinnamon powdered.
                                              • Marinate the spice mix on the chicken and keep aside for 1 hour.
                                              • Hot a pan and put some oil .Then fry the marinated chicken pieces  in low flame .
                                              • Keep aside the chicken til the masala ready.

                                              Gravy

                                              • Hot a pan then add 2tsp of butter and allow to melt it.
                                              • When the butter becomes brown in colour add the cloves,green cardamom ,maze,chopped onions and when its colour changes add  the chopped tomatos into this and stir well.
                                              • When this mixture become little cooked turnoff the flame and put this mixture into a blender and process well.
                                              • Hot an another pan and put some butter.when its changes ts colour to brown add the chopped ginger and chopped green chillies.then stir well .
                                              • Then add blended tomato mixture into this and put some salt and kashmiri chilly powder and stir the mixture very well.
                                              • When the raw smell of the tomato becomes nil add the fried chicken pieces into the mixture and allow to cook this in low flame for 10 minutes .
                                              • After that add one cup of fresh cream into the gravy and mix well.serve into a plate garnished with coreande1r leaves.


                                                                Cutlet is an easy simple recipe everyone can prepare.We can make different cutlet if know one recipe.Here is the chicken cutlet.By replacing the main ingredient chicken we can make many different cutlets like vegetable cutlets ,beef cutlets etc.
                                                                                       We can make this as an evening snack or can make this for any guests .Its an easy  standard food item  we can make at home .if we prepare the mixture (keema) we can keep it for mearley 1 month.so whenever required we can make easily.The preparation contain only two steps.first making the mixture and shape them and deep fry in hot oil . the whole mixture is already cooked so nothing to worry about it.The steps of making the cutlets are below.Try this .

                                              1. Boneless chicken
                                              2. Onion
                                              3. Ginger
                                              4. Potato
                                              5. Salt
                                              6. Turmeric powder
                                              7. Pepper
                                              8. Green chilly
                                              9. Bread crumbs/roti powder
                                              10. Garam masala
                                              11. Egg white
                                              12. Oil

                                              Steps of making

                                              • Take a cooker and add the boneless chicken ,turmeric  powder,salt and  cook for 4 whistle .The chicken will become soft  and yellow in colour .
                                              • Take a pan and add the peeled potatos ,salt and water together and cook until the potatos boiled .
                                              • Take a pan and add the chopped onions ,ginger,green chilly ,garam masala,pepper and add pinch of salt if required(already added salt in chicken and potatos  so becareful while adding salt) and stir well and cook for 5 minutes .
                                              • Take a blender and add the cooked chicken and  process well.its makes the chicken fully blend .so its easy to make the smooth cutelet balls and no crashes .
                                              • Allow the all  mixtures to cool and  add the cooked potatos and minced chicken into the onion mix .then mix all the ingredients well.
                                              • Take some mix and Make small  balls in required shape .
                                              • Beat the egg white and keep aside in a plate .
                                              • keep aside the roti podi/bread crumbs for the coating.
                                              • Dip the cutlet balls into the egg white and then roll it in the  bread crumbs/roti podi  and deep dry in oil.
                                              • Take a plate and serve  hot with  tomato ketchup.
